We've kicked it up a notch with our Colden's Freakin' Greek Rub and a burst of garlic to make these Creole White Beans and Ham Hocks a hit on any Southern table.

  • 1 1/2 cup(s) Onions, diced coarse
  • 1 cup(s) Bell Pepper, diced coarse
  • 2 tablespoon(s) Garlic Paste
  • 1 1/2 cup(s) Celery, diced coarse
  • 1/2 pound(s) White Navy Beans, soaked
  • 2 Ham Hocks
  • 4 tablespoon(s) Vegetable Oil
  • 5 cup(s) Chicken Stock
  • 2 tablespoon(s) Colden's Freakin' Greek Rub
  • 1/2 cup(s) Parsley

Tools Needed

  • Step 1: Burning the recteq Ultimate Blend Pellets, turn your recteq on and set it to 500°F. Place a 7 quart recteq cast enamel Dutch Oven on grill and allow both to come up to temp.
  • Step 2: Once grill and Dutch Oven are up to temp, add oil, onions, peppers, and celery to Dutch Oven and cook until onions become translucent (about 8-10 minutes).
  • Step 3: Add stock, soaked beans, ham hocks and Colden's Freakin' Greek Rub. Cover and simmer until beans are tender(about 60 minutes), making sure stock level stay full.
  • Step 4: Once beans start to become soft, with a slotted spoon remove 1/2 the beans and rough chop them in a food proccessor then add them back to Dutch Oven. Keep cooking until ham hocks are tender (about 30 minutes).
  • Step 5: Remove Dutch Oven from recteq and garnish with parsley.

Chef Pairings

These garlic-loaded white beans will be perfect served over hearty rice along with fileted fish as a main course.
